Distinguished Langtons Classification. Aberfeldy is a unique vineyard, friable red loam over limestone nestled at the bottom of the easternmost hills of the Clare. The cropping level in the vineyard is never more than 1½ tonnes per acre, producing grapes with intense colour, flavour and tannins. The elegant yet intensely flavoured, highly limited yields of precious Shiraz grapes form the backbone of Aberfeldy.

Excellent Langtons Classification. When the Birks of Wendouree settled Valley Clare in 1904, they planted their site to Shiraz. Many of these old vines remain productive and offer the backbone of fruit for the icon Tim Adams Aberfeldy. Younger rootings of the same clone yield grapes of the most intense colour, depth of flavour and refined tannins. The intense perfume and muscular nature of the finished wine reflects the character of site as much as the charm and personality of the animated and affable winemaker.

Thorn-Clarke are one of the Braossa's most salubrious grower families, by appointment to Australia's most recognized brands. Thely can be proud of six generations in Barossa viticulture, a timeless source of Shiraz for the nation's most memorable vintages. The best parcels are selected from the estate's St Kitts, Milton Park and Kabininge sites to form the backbone for Shotfire. The enduring Aussie style, a generous palate of ripe blackberry and plum flavours, seasoned by spice and vanillan oak, supported by a structure of fine, pliant tannins.

The initial release of Riebke Ebenezer was conceived during an economic decline in Barossa Valley. The Riebke family were being paid very little for their Shiraz and asked Teusner if he was on the market for quality fruit. Teusner agreed to produce a wine but made no promises, as they hadn't even seen the harvest. The epiphany occurred as soon as fermentations began and the winemakers knew that they had come across something very special indeed. A tip of the hat to the Riebke brothers, whose vineyards play the essential role in the wines of Teusner.

Albert is the namesake of Teusner's grandfather, commemorated for his tireless hard work and commitment. Albert is sourced from two small blocks of low yielding unirrigated vines, aged between fifty and a hundred years, one precious site in the Barossa's north at Ebenezer and the other, near the valley's southern most parts at Williamstown. Pure and expressive, displaying the power, elegance and generosity of splendid old vines Shiraz, Albert is a joy to drink now and will continue to evolve magical Barossa richness.

Crayeres is a site of great peerage, adjacant to the highly distinguished Tapanappa Vineyard at Wrattonbully, uncannily akin geologically to the chalk escarpments which are the dominant terroir under the great slopes of Champagne. Parcels of hand picked Shiraz and a measure of contiguous Cabernet Franc, are filled to one tonnes Potter vessels for maceration and co vinification, a course of ten months in a luxuriously high proportion of new French oak, followed by eighteen months in well seasoned oak foudres. Blackberry and liquorice throughout, peppery and piquantly spiced, big boned Shiraz of immeasurable length.

You can be sure if it's Temple Bruer, fashioned from harvests of the healthiest, cleanest fruit, grown to a fully Certified Organic vineyard in the premier viticultural precinct of Langhorne Creek. Treated to the good old fashioned vinification process of open ferments and frquent pumpovers, completion of malolactic and a term in American oak to soften the palate and tame the tannins, without the addition of sulphur or preservatives. Te Mata are New Zealand's oldest winery, family owned and operated, they produce world class efforts, from fruit exclusively grown to estate vineyards in the Ngatarawa Triangle of Hawkes Bay. Winemaker Don Lewis adores the tannins, structure and electrifying expressions of Spanish wine. Fruit for Tar & Roses is harvested off elite Heathcote vineyards, much of which must be hand picked, all components are treated separately throughout ferments and ageing. The larger volume of Shiraz comes from richer Cambrian soils, while the smaller parcel is grown to much tougher gravelly, grantic soils. The first component makes a rounder, fuller fruit driven wine with intense chocolate and earth characters, the latter contributes elegance and restraint.

At the heart of Barossa culture, is the tradition of Lutheran migrants who were invited by the British Crown, to flee persecution in the old world and populate the new colony of South Australia. Johann Christian Henschke arrived in the 1840s, acquiring property at Krondorf and planting vines, he sold his first vintage in 1868. The Henschkes of today own and operate some of the most distinguished vineyards in Australia, they know the best Barossa growers well and source the most exquisite parcels of Shiraz every year for inclusion into Tappa Pass.

A selection of the finest barrels, Vincent is crafted from Shiraz picked off vines up to forty years of age, very close to Kangarilla Road and the Clarendon Hills, specifically Bays 3 and 4, planted to the elite Bakers Gully site in McLaren Vale, which yields a scant tonne per acre. Vincent is a richly flavoured wine, it begins with a harvest of exceptional quality Shiraz, treated to rigorous selection and an extended maturation. The most stringent standards are applied, the top barrels of vintage, crafted to reflect truth in regionality and pure varietal expression.

There are few marques, better placed than Taltarni to create the ultimate indulgence in sparkling burgundy. Shiraz is crushed into small open top fermenters for a week of vinification, hand plunged, regularly pumped over and gently pressed into French oak barriques for a term of age. Its fragrant blackcurrant mousse precedes an edifying spice and chocolate palate, muscular Pyrenees tannins and a sheath of dusky oak balance the indulgent sweetness of fruit. A moreish purple wine to match with fruit dressed poultry, cherry duckling or the traditional festive pud.

Shiraz is a varietal with which Taltarni has excelled from the very start, no real mystery as it's grown to some of Victoria's best purpose built vineyards. The quality of Shiraz grown to parched vineyards in Victoria's rugged western districts, has been well known throughout the world of wine since the days of gold rush and early settlement. Taltarni have since established an enviable reputation for vintages of powerfully structured, statuesque red wines, fully exploiting the soft spoken majesty and graceful intensity of Pyrenees Shiraz comes naturally. Released in limited quantities, a mouth coating Shiraz to savour alongside grilled meats and roast game, or costly shards of pungent, esoteric cheese.

The old fashioned practice of treating ferments to a manually operated basket press, preserves the elemental rectitude and textural integrity of good wine. Bruno Tait sources a unique parcel of Shiraz from a single vineyard at Rowland Flat which yields a meagre tonne and a half per acre. The precious old vines are seventy years of age, they are consulted by Bruno twice a week at vintage time to determine the perfect day for picking. The vinification is wholly natural and very old world in style, an extremely limited 240 dozen are produced.

Tahbilk are a bulwark of Victorian Shiraz, the original plantings are some of Australia's eldest productive vines. Traditional vinification techniques, as practised by Tahbilk's winemakers in the 1860s, are still employed, the original Chais of the wineworks remain to this day a most integral part of the operation. Wine & Spirits Magazine selected Tahbilk's original 1860 Vines Shiraz Vineyard as one of the great twenty five vineyards in the world, along with such illustrious icons as Romanee Conti La Tache and Chateau Lafite, Vega Sicilia and Chateau Y'Quem.

A profuse and intricate, old vines Shiraz, articulating the complex personality and extraordinary depth of character achieved through the legacy of historic estate plantings. The majority of fruit is picked off a precious endowment of vines planted 1933, treated to an old world style of vinification which has changed little since 1860. Stunningly perfumed before a penetrating palate, polished showroom tannins and velvet textures, a truly remarkable Shiraz to match with fragrant red wine braises and seared aged meats.

Outstanding Langtons Classification. From one of the most famous vineyards in the world, a half hectare of ungrafted, prephylloxera plantings, amongst the oldest productive Shiraz vines to be found anywhere. Internationally renowned for its eloquence as well as its historic significance, 1860 Vines Shiraz is treated to an old world vinification in a collection of hundred years old, oak fermentation vats. 1860 is crafted to remain true to its ancient heritage, the smells and flavours of an old fashioned wine, within a structure of enduring elegance and timeless refinement.

A completely engaging construct of Victorian Shiraz, fashioned to a bright new world styling, endowed with ample complexity, derived from a combination of old vine fruit, controlled yields and selection of site. Scotchmans Hill can access and retain many of the smallest and most propitious parcels of fruit, grown to good vineyards on Bellarine Peninsula, providing a virtual artist's palette of balmy regional characters, from which to assemble a wine that's complex and animate, yet graceful and restrained.

Originally planted to Shiraz in the 1970s, Summerfield vineyard borders Taltarni. The earliest harvests were actually sold to them, along with the illustrious houses of Great Western and Chateau Remy, now known as Seppelt and Blue Pyrenees. This is the style of Shiraz which placed Victoria's Pyrenees on the world wine map. The palate fills with winegum tannins, dark brooding fruits, plums, berries and spice, finishing with incredible length. No other appellation makes such majestic Shiraz, this is what Summerfield's old vines are all about, it only gets better from here.

Sugarloaf Creek Vineyard is situated within the rolling hills of the Great Dividing Range, on the boundary of three geographical regions, the Goulburn Valley, Upper Goulburn, and Macedon Ranges. The cooloer climes here translate into a long and slow ripening period for the fruit. Established by the Blyth and Hunter families in 1998, the vines have been planted and nurtured to maturity completely by hand. The entire vineyard is planted with Shiraz PT23 vines on their own roots and is a labour of love, maintained by the two families.

Streicker's Bridgeland property yields harvests of the finest Shiraz. Crafted to traditional winemaking techniques, a regimen of old fashioned plungings and open ferments, into a pure, single vineyard Rhone style Syrah. A mere 250 cases produced each year, vintage 2009 claimed top trophy at illustrious VISY Great Australian Shiraz Challenge, the first time ever for Margaret River. Its big, blooming bouquet of blueberries, violets and allspice, roast game, graphite and tar, a bliss for those who enjoy the garrulous, savoury styles of truly grand Syrah.
